Professional Cookery Technical Diploma Level 3
During this Catering and Hospitality Level 3 course you will learn more advanced skills and roles within kitchen and restaurant operations. This will enable you to work in a variety of potential positions in industry. You will develop kitchen skills in areas such as the preparation and cooking of fish, poultry and pastry, as well as kitchen management, ordering, costings and food safety practises. Your restaurant qualification will take you over subjects including; methods of cocktail making, beverage knowledge including beers, wines and spirits, customer service and table service.
What topics are covered?
The course is made up of 12 units including:
- Applying workplace skills
- Kitchen operations, costs and menu plans
- Nutritional and special diets in catering
- Plus more advanced cookery methods including preparation of meat, fish, soup, fruit and vegetables, desserts and bakery
In addition, you will undertake a restaurant qualification.

This course is suitable for anyone wishing to develop their skills in this vocational area.
What are the entry requirements?
You will need 4 full GCSE’s at grade 3 or above as well as Maths or English at grade 4 or above. You can also join this course after completing a Professional Cookery Technical Certificate Level 2.

Level 2 Food and Beverage Certificate

How will I learn?
Your learning will be classroom and practical based, with assignments, presentations and reports, working individually and in small groups.

You will be assessed via coursework and practical cookery tests.

- Progress onto a Level 3 Advanced Diploma programme or apprenticeship
- Gain employment within the catering and hospitality industry

Where will I need to go on my first day?On your first day, please report to the Reception in the Roper Building at City Centre Campus.

A basic stationery pack will be issued to enrolled students.
