Professional Cookery Technical Certificate Level 2

Course Overview

During this Catering and Hospitality Level 2 course you will learn key cooking and serving principles and practices and a broad range of theory topics. The units relate to kitchen equipment, healthy foods and cooking methods, techniques and cover a range of foods from across the globe. You will also undertake a restaurant qualification which will include restaurant service in our fine dining restaurant, bistro and canteen. Topics covered for this qualification include; customer service, silver service, table service and drinks service.

What topics are covered?

Units include:

  • Maintain a safe, hygienic and secure working environment
  • Contribute to effective team work
  • Food safety
  • Health and safety
  • Healthy foods and special diets
  • Kitchen equipment and personal workplace skills
  • Preparing and cooking food, using methods such as boiling, poaching, steaming, baking, roasting and grilling


In addition, you will undertake a restaurant qualification.

What are the entry requirements?

  • Four full GCSEs at grades D/3, including English Language and maths
  • Dedication and enthusiasm, and a desire to succeed in the industry
  • Interview

You will gain:

  • Level 2 Technical Certificate in Professional Cookery

How will I learn?

Your learning will be classroom and practical based, with assignments, presentations and reports, working individually and in small groups.

How will I be assessed?

You will be assessed via coursework and practical cookery tests.

What can I do after this course?

  • Progress onto a level 3 diploma programme or apprenticeship.
  • Gain employment within the catering and hospitality industry

You will gain experience in our on-site state-of-the-art kitchens and restaurant facilities such as The Shrubbery Restaurant and Bistro.

Where will I need to go on my first day?

On your first day, please report to the Reception in the Roper Building at City Centre Campus.

What else do I need to know?

You will need to comply with the following policies that are issued at enrolment:

  • Dress code
  • Code of conduct
  • Locker policy
  • Scissor / knife policy


A basic stationery pack will be issued to enrolled students.
