Catering: Introduction to Home Baking

This introductory course to home baking will teach you the essential skills to make a range of British and Mediterranean quiches, sweet tarts and a variety of breads to enjoy and share with family and friends. Ideal for absolute beginners and those wishing to refresh their technique.

What topics are covered?

You will cover a range of tasty recipes and topics, including:

  • Sweet Pastry
  • Shortcrust Pastry
  • Brioche
  • Enriched Dough
  • Bread Dough
  • Mediterranean Breads
  • Rubbing and Crimping Methods
  • glazing
  • decorating
  • Apportioning

Who is the course aimed at?

This course is aimed at absolute beginniners, no experience necessary and also suitable for those wishing to refresh their technical know how.

Who will be my tutor?

Your tutor will be Chef Lecturer Fabrice Monperrus. Fabrice trained in classic French cuisine in Lyon, the heart of gastronomy. He teaches full time at the College and is passionate about sharing his love of cooking.

How will I learn?

You will learn through practical demonstrations, one to one guidance, hand outs. Your tutor will also give instruction on basic food hygiene and health & safety when working in the kitchen.

You will be standing throughout the session.

Where will I need to go on my first day?

On your first day, please report to the Reception in the Roper Building at City Centre Campus.

What do I need to bring?

You will need to bring your own apron and container to take your finished baking home. Please wear appropriate clothing for cooking in as you will be working in heat and gas cookers. Please do not wear nylon clothes. You must wear practical shoes with enclosed toes and which are non slip.

What else do I need to know?
